what’s your favorite “almost no cooking” recipe?

Apologies for the totally self-interested posting here. The final few weeks of pregnancy are upon us, hence my lack of posting. While I’ve been busy with work and baby prep, I’ve actually been cooking up a storm, and since our CSA has recently started up, I’m looking forward to a fun filled summer of sleepless nights and abundant fresh produce.
Given that combination, I thought I’d send an appeal to you, dear readers, and ask you for your favorite “almost no cooking” recipes - the ones that you go to time and time again when you’re too tired to cook or when your CSA share drops lovelies in your lap that you just can’t bear to sully with too much cooking. I’m hoping your suggestions can help me feed my family during the first few weeks of our new baby, so don’t hold back - any suggestion goes, and it’s likely that in the next few months, I’ll cook them all.
I made this no cook pasta sauce last night to eat with the brats from the grill. It was so easy and made from things already in your fridge. Mix two Tbsp pesto, two Tbsp tomato paste, 1/2 cup cottage cheese, two Tbsp grated parmesian, salt, pepper, and a small drip of olive oil. Stir in hot steemed veggies and just cooked pasta, toss, and you are ready to go! The pasta a brats also make great leftovers teh next day.

We are big fans of homemade pizza.
I have simplified it to be the perfect no cook evening meal.
I cheat with a whole wheat ready made pizza crust - spread it with olive oil, basil, thyme, oregano, red pepper, a dash of cayenne, and crushed garlic. Then top with thin slices of tomatoes and add your favorite toppings. A favorite combination in our house is thin sliced zucchinis, thin slices salami, and feta or mozzarella cheese. Obviously the possibilities are endless and the margarita style pizza lends itself very nicely to fresh CSA veggies!
Add a side salad and its actually a pretty healthy dinner depending on your toppings!
oooh, nice idea Melinda. I often forget about ready-made crusts because I usually make our own and cheat a bit with a bread machine. You’re totally right - it is a next to zero cooking dinner, and very healthy as well.
