This Beet Risotto is a homage to Arif’s rant against hiding veggies.

We LOVE beets. I’ve been known to buy beets for the greens alone, and this risotto looks fantastic - I love the color.
It would make a fantastic Halloween dish too - Blood Risotto or something like that.
Here is how to make this risotto:
Roast the beets in the oven for about an hour until tender but not soft. Rince them under cold water to help remove the skins. Chopp into chunks and set aside.
In a wide flat bottomed pan, heat olive oil and add 1 cup of arborrio rice. Stir, keeping the rice from browning too much for about 5 minutes. Add chopped onion and garlic and saute until soft. Start adding stock slowly to cover rice. Cook stiring every now and then, adding more stock for another twenty minutes or so. Add the beets, salt and pepper and keep stiring, adding more stock as needed until the rice is done. Right before serving, stir in some parmesian cheese and/or another soft creamy mild cheese like mascarpone.
